I've been blackening my catfish lately and other fish too.It's the easiest way to cook 'em up.
Get you some Blackened Fish seasoning. I like www.chefhansgourmetfoods.com (http://www.chefhansgourmetfoods.com)
Cut your fish into bite size chunks.
Get your non stick skillet hot with butter or peanut oil.
Sprinkle your blackened seasoning on the chunks and throw them babies in the hot skillet. Shake em and turn em constantly. Right before yopu pull them throw in some chopped garlic and remove from heat. Dump them out on some newspaper and call you dinner guests in for the feast.

anyone got a good recipe for buck testacles. The fried thing just isn't working anymore. Doc says I need to reduce the fat intake

I take a mason jar 1/2 vinegar and 1/2 blood from the buck. Allow them nuggets to marinate in there for about 6 months at room temp.
